  • about our cooking classes

    Set in a stunning winery amidst the evergreen rolling hills of Umbria with a guided tour of the winery included for each course. Participants receive a set of printed recipes and a souvenir to remember the visit. Classes are in English and are available from MON- SAT all year. Classes are typically offered either as a morning, followed by lunch/tastings or afternoon, followed by dinner/tastings. Classes have a minimum of 2 to a maximum of 10 and are hands-on for a major part of each lesson. Individuals may inquire either for a private lesson or to be part of an existing group. Further advice on the specifics of each class may be given on receipt of a booking request.

  • 3-hour lesson

    The recipes taught represent seasonal Umbrian home-cooking with a choice of either a morning session from 10AM until 1PM or an afternoon session from 3PM until 6PM. It includes a tasting of the food prepared in the cooking class accompanied by wines from the estate. The content of the class may vary according to your interests: pastas & simple breads, cakes & torte, antipasti etc

  • truffle hunting: within an ancient woodland with an expert quarryman and his expertly trained dogs. JUN-SEP are the black summer truffle, OCT-DEC the white truffle. At the end of the search, you get to enjoy the harvest!
  • residential cooking course

    Our "residential" course offers cooking classes over 2 or 3 days with accommodation provided on the winery estate where the classes are conducted. Courses are typically offered as an afternoon cookery course followed by dinner including your dishes and morning classes followed by lunch. Each course is run over 4 hours preparing a complete, seasonal menu consisting of antipasto, 1st course, 2nd course with side vegetables and dessert based on genuine Umbrian ingredients. Wines from the estate accompany each meal. These days may be varied according to your interests and may also include a morning truffle hunt or a special course on Italian home-baking.

    Learn the versatility of cooking with the estate’s stunning olive oil, including cakes, pastries, biscuits and other delicious savoury dishes. What better way to understand the importance of this single product and how to use it to the best possible advantage.

    Over this fabulous and focussed day some 8 recipes are prepared, including: antipasto, 1st course, 2nd course with vegetable side dishes, and dessert based on genuine Umbrian ingredients. Accompanying wines from the estate are served with each course. It’s an experience not to be missed! The lesson runs for 5 hours with a choice of a morning session from 10AM until 3PM with lunch or an evening session from 4PM until 9PM with dinner - all including the dishes prepared.
  • cheese touring & tastings are one of our favourite excursions, discovering hidden away gems with every imaginable type of cheese made from buffalo milk, a quiet country idyll giving up the secret of the goat farm, and an equally interesting, if a tad more more commercial offering of the great pecorino cheeses

    In your food & wine journey, you may also like to add additional activities and excursions such as, oil tastings - cheese discovery & tastings - truffle hunting & tastings - specialist wine tastings - trattorie & restaurant outings (both traditional & modern). Cooking courses are typically combined into a larger program including accommodation, using Orvieto as a home-base and with all transport/transfers included.

    Nothing beats a homemade cake. In this series of classes you will learn to make the most traditional and celebrated Italian biscuits, tarts, cakes and desserts such as the irresistible tiramisu and the lesser-known Pampepato from Terni .

    For this program, we a guided tour of a specialist vineyard and then a great light-lunch that consists of typical Umbrian antipasto dishes such as bruschetta with extra virgin olive oil, cured meats and cheeses and Sagrantino wine biscuits, all paired perfectly with a selection of wines from the vineyard
